We went hiking up behind Montalvo in Saratoga. The redwoods smelled fantastic and the air was nice and cool. I packed us a picnic lunch with a peanut butter and jam sandwich (for Paul) and a yogurt (for me) with a honeycrisp apple, clementines, and ranger cookies for dessert. We discussed names for our future children while we hiked. For boys, I love (and I'm pretty sure Paul is with me on this) Truman and Hollister. For girls we like Clara and Lily. For anybody in my family, I call dibs on those names.
Ranger Cookies (a childhood favorite of mine)
2/3 cup shortening
1 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup oatmeal
1 1/4 cup cornflakes
1/2 cup coarsely chopped walnuts
Preheat oven to 375 degrees. Cream shortening, sugar, egg, and vanilla. Add flour, salt, baking powder, baking soda, and salt. Mix well. Add oatmeal, cornflakes, and walnuts. Drop by rounded teaspoonful onto a cookie sheet and bake for 8-10 minutes or until done.
I'm betting these would also be good with a cup of M & M's, toffee bits, or butterscotch chips stirred into the batter. But the old-fashioned way is delicious just as is.
